Creamy Garlic & Coriander Mushrooms

This breakfast dish will put a spring in your step, literally! Truth is I enjoy having granola and oats to start my day but it’s exciting to switch it up now and then. So here goes delicious creamy garlic and coriander mushrooms on rye bread! So simple to prepare and delicious.

My love for mushrooms cannot be fully expressed. Paired with garlic and you have a delicious combo! Plus, mushrooms are a great source of Vitamin D and B. I like that it can also double as a quick snack during the day. What else can I say to sell this? I’d love to know if you try it out! Enjoy xx

Ingredients

  • 250g of chestnut mushrooms, chopped

  • 1/2 onion, chopped

  • 4 garlic cloves, crushed

  • 1 bunch coriander, chopped

  • 2tbsp coconut milk

  • Olive Oil

  • Juice of half a lemon

  • 2 slices rye bread (available at healthy u)

Directions

  • Heat olive oil in a pan. Add the onion and cook over a medium heat until transparent.
  • Once the onions are cooked, add in the garlic and cook for another minute.
  • Then add in the mushrooms, stir and leave to cook for another 5-10 minutes until soft.
  • Just before serving, add the coriander, coconut milk, salt, pepper and lemon juice.
  • When ready; spoon your mushrooms on top of your rye bread (toast if desired) and garnish with coriander. Enjoy! xx
