Meal Prepping

I try to prepare my week’s lunches on Sunday evenings. This is one of the best time – saving tips if you want to eat healthy throughout the week.

This is a delicious mix of brown rice, lentil coconut curry and brocolli. Instead of cooking one meal, I imagine that I’m cooking for 3 hungry men! ?
I then freeze the portions and I’m sorted till Friday! Each day i top the portion with avocado ? Over the weekend I then have the freedom to pepare special meals or eat out.

That saves me more than hour each day that I would have spent cooking. If you have a busy schedule then you know how precious that time is! This also ensures that all my meals are healthy rather than opting to buy a meal elsewhere (which is often not healthy). Have a great week! ?
