Banana and Oat Pancakes

My kind of pancake, easy, quick and delicious! I love having oats for breakfast and this was a perfect way to enjoy them. I could sing about the amazing benefits of oats all day! Oats are well known for lowering high blood pressure and reduce bad cholesterol and are packed with numerous other vitamins, minerals and fibre. Plus, they are the ultimate fitness food because of their slow energy-releasing attribute, making sure blood sugar levels remain steady through a workout, while providing enough energy to keep you going.

I then topped these yummy pancakes with some tree tomato, bananas and a drizzle of honey which were an incredible combination of flavours. Bananas and tree tomatoes are both loaded with valuable micronutrients, especially potassium which helping to regulate heart function and regulating blood pressure. Enjoy!

  • 1 cup almond or coconut milk (unsweetened)
  • 2 cups rolled oats
  • 1 ripe banana
  • 2 tsp baking powder (gluten-free option available at Healthy U)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp freshly ground nutmeg (optional)
    1/2 tsp salt
  • 3 tbsp pure maple syrup
  • 2 tsp pure vanilla extract

  1. Place oats into a high speed blender and process until a flour is reached.
  2. Add in the remaining ingredients until a batter is formed.
  3. Heat a non-stick pan on medium and pour in some batter depending on the size of pancakes that you would like.
  4. Allow the pancake to cook until bubbles appear around the edges, then flip and cook until golden.
  5. Enjoy them as they are or with any of your favourite toppings like fresh fruit, pure maple syrup, honey, nut butter, jam… or whatever you like with your delicious pancakes!

    I’ve started planning my meals ahead. I am going to do this soon. Since I’m not yet vegan (Yes, it has been on my mind but I’ve been unable to go cold turkey) I’ll use milk or water. ?
