Toast, Two Ways

It’s becoming evident that I find any excuse to have avocado at any point of my day. This was intended to be just for breakfast but i’ve cheekily turned it into a snack as well. Using avocado as a spread on toast is so simple and delicious. Plus, It’s filling and takes just two minutes to prepare which probably makes it the easiest dish I’ve prepared in a very long while. I’d love to know if you try it or any other spreads you use on your toast xx

Ingredients

  • Rye bread, plain or toasted (available at Chandarana and Healthy U)

  • Half ripe avocado, mashed

  • 1 tsp linseeds

  • 1 ripe tomato, chopped roughly

  • 1 tbsp coriander leaves

  • 2 tbsp lemon juice

  • Salt and pepper to taste

Directions

  • For the tomato toast: Top one half of your toast with the chopped tomatoes. Season with salt and pepper to taste then drizzle with 1tbsp of lemon juice.
  • For the avocado toast: Scoop the flesh of the halved avocado into a bowl. Add the lemon juice and mash roughly using a fork, then season to taste with salt and pepper. Spread onto the other half of your toast and sprinkle with the coriander.
