This bowl of basil, tomato and spinach pasta with butternut squash is an amazing comfort meal. I had it after a long morning of classes and the vibrant colour and delicious taste of basil with nutritious veggies instantly cheered me up! I’d love to know if you try it out! xx
Ingredients
salt and black pepper to taste250g Pasta; I used quinoa pasta
400g cherry tomatoes, halved
1 bunch baby spinach; roughly chopped
1/2 small butternut squash; chopped into cubes
Handful of basil; about 10 leaves, roughly chopped
1/4 small red onion; chopped
1 tsp oregano
Small red pepper
2 tbsp olive oil
Directions
- Bring a pot of salted water to boil. Cook the pasta for 5 minutes. Drain and reserve 3/4 cups of pasta water.
- While the pasta is cooking, heat the olive oil in a large pan over medium heat.
- Add the onion and garlic, and heat until the onions are transparent. Add the tomatoes, pepper, oregano, salt and black pepper. Cook tomatoes and pepper for about 3-4 minutes until they just begin to soften.
- Add the cooked pasta and reserved pasta water gradually until the pasta is well coated. It also depends on your desired consistency. I like a thick consistency for my pasta.
- Allow it to simmer for about a minute then add the chopped spinach and basil. Reduce the heat and gently stir to coat evenly. Add more pasta water if needed. Remove from heat.
