Raisin Peanut Butter Cookies

We’ve been baking with our Gluten Free All Purpose Flour and our new obsession is these cookies. They are quick and simple enough to mix in one bowl. They are perfect for breakfast and snacking and a batch keeps me sorted throughout the week. We love to pair it with a hot cup of chocolate using our Oat Milks. If you try it out, let us know! Ingredients

  • 40g GF All Purpose flour

  • 25g oats

  • 125g peanut butter

  • 35g raisins

  • 1/4 tsp sea salt

  • 1/2 tsp baking powder

  • 35g jaggery/brown sugar (adjust to desired sweetness)

  • 1/2 tsp vanilla extract

  • 1 flax seed egg

Directions

  • Preheat oven to 175 C and line a baking tray with parchment paper.
  • Stir the flour, oats, coconut, baking powder, salt, and sugar together in a mixing bowl.
  • Add the peanut butter, flax egg and vanilla and stir to form a dough. Add more flour or peanut butter to achieve the right consistency if it’s too wet or dry.
  • Stir in the raisins.
  • Scoop dough into roughly 2-Tablespoon amounts and flatten them into small discs. Place on baking sheet with about a 1-inch gap in between each cookie to allow for spreading.
  • Bake for 10 minutes or until their edges turn slightly brown.
  • Remove from oven and let cool for 10 minutes.
  • ENJOY!! (We suggest pairing it with oat milk).
