Corriander, Lemon and Paprika Corn Cobs

These cobs are amazing when you’re cooking for friends or family. I’ve taken them as a dish to two pot lucks now and they never disappoint! Always a hit! They’re also a great option for a healthy snack. If you love mahindi choma (roasted maize) then you are bound to love this! The spicy mix of coriander, lemon and paprika with the sweetness of corn is a perfect combo. So simple, healthy and delicious!

  • 2 corn cobs
  • Paprika
  • Salt
  • Corriander leaves
  • Coconut oil
  • Black pepper
  • Half a lemon

  1. I boiled the cobs for 10mins then grilled them for 5 mins (you can do this for a bit longer if you want to brown them slightly more).
  2. I then lightly coated them with coconut oil and seasoned them with paprika, salt, black pepper and corriander and spritzed juice of half a lemon on them. Easy as that! ?
