Oat Porridge with Baked Banana and Chocolate Spread

I love having oat porridge in the morning; it’s so warming and nourishing. I genuinely go to bed dreaming of breakfast the next morning! Imagine how much better it is when baked banana, homemade chocolate spread (‘Nutella’), pumpkin seeds and coconut are added to it! Pure bliss! That’s one of the things I love so much about porridge; you can get creative by topping it with your favourite treats for a delicious start to your day. Plus, this bowl of goodness takes such a short time to prepare (perfect for busy days!) and keeps me fuelled for hours. I know you will love it!

Ingredients

  • 100g oats

  • 200ml water

  • 100ml almond milk or coconut milk

  • 1 banana

  • 1 tsp coconut oil

  • Pumpkin seeds

  • Flaked coconut

Directions

  • Preheat oven to 180C and line a baking tray with foil or parchment paper.
  • Place the oats, water and milk in a pot, stir well and let it simmer on medium heat for 5 minutes, stirring every minute.
  • Cut the banana in half and coat with the coconut oil. Place the banana halves onto the foil and bake for 8-10 minutes until slightly bronzed.
  • Place the banana half on top of the bowl of porridge and sprinkle pumpkin seeds and coconut on top.
  • Enjoy!
