Wow! Cauliflower is such a versatile vegetable. This was my first time roasting it whole and it was so simple, quick and delicious! The combination of the spicy curry and sweet honey is just perfect! I’d love to know if you try this out ?
Ingredients
1 large cauliflower
2 Tbsp curry powder
2 Tbsp honey
2 Tbsp olive oil or melted coconut oil
2 Tbsp water
Directions
- Preheat oven to 200C. Also fill a small baking pan halfway with water and set on the floor (bottom) of the oven. This will provide steam to help the cauliflower cook more evenly.
- Trim off the bottom stalk of the cauliflower, rinse and dry it.
- In a bowl, mix together the remaining ingredients.
- Pour the mixture over both the top of the cauliflower and it’s core. Use your fingers or a brush to rub the mixture all over.
- Place the pan in the oven and roast for 35-50 minutes. To know that it’s ready, a knife should easily pierce the core. Based on your preference, if you roast it longer, the cauliflower will be softer and tougher if you roast it for a shorter time.
- Remove from oven and enjoy! I had mine as a side with turmeric rice and grilled veggies and it was FANTASTIC!!!
