A gluten and dairy free diet means having to avoid most pasta dishes but imagine the joy of finding a much healthier option that tastes just as delicious! I’m in love with these zucchini noodles especially when I want a quick meal!
A friend invited me to dinner and prepared noodles using zucchini and I was amazed!! She used a tool called a spiralizer and I had to get one. It can spiralize almost any veggie or tuber – zucchini, carrots, sweet potatoes… After that all you have to do is combine it with your favourite sauce and you’re done in 5 minutes or less!
I’ve commonly used it to make zucchini noodles especially when I want a simple, light and delicious meal. I hope you enjoy it as much as I do!
Recipe
Ingredients:
1 zucchini
⅓ cup water (85 ml) (optional if you want a thicker sauce)
2 tbsp lemon juice
1 avocado
4 tbsp pine/brazil nuts (optional)
1¼ cup basil (30 g)
12 cherry tomatoes (sliced in half)
Method:
1. Make the zucchini noodles using a peeler or the Spiralizer.
2. Blend the rest of the ingredients (except the cherry tomatoes) in a blender or mix in a bowl until smooth.
3. In a large bowl, combine noodles, avocado sauce and cherry tomatoes. Enjoy!
