This creamy banana, coconut and pumpkin seed porridge is the perfect way to start a busy productive day. It takes less than 10 minutes to prepare and is so filling.

Ingredients
1 ripe banana
100g of porridge oats
250ml almond milk, 1 cup
1 tbsp pumpkin seeds
1 tablespoon of honey
Handful of flaked coconut
Directions
- Preheat oven to 180c.
- Cut your banana into slices and place them on a baking tray. Roast in the oven for 15-20 minutes until golden.
- Place your oats and milk in a pan over a medium heat and cook for around 5-8 minutes until smooth and creamy.
- Once your bananas are cooked, place them on top of your porridge with the coconut and pumpkin seeds and enjoy! xx
