Banana, Coconut & Pumpkin Seed Porridge

This creamy banana, coconut and pumpkin seed porridge is the perfect way to start a busy productive day. It takes less than 10 minutes to prepare and is so filling.

Ingredients

  • 1 ripe banana

  • 100g of porridge oats

  • 250ml almond milk, 1 cup

  • 1 tbsp pumpkin seeds

  • 1 tablespoon of honey

  • Handful of flaked coconut

Directions

  • Preheat oven to 180c.
  • Cut your banana into slices and place them on a baking tray. Roast in the oven for 15-20 minutes until golden.
  • Place your oats and milk in a pan over a medium heat and cook for around 5-8 minutes until smooth and creamy.
  • Once your bananas are cooked, place them on top of your porridge with the coconut and pumpkin seeds and enjoy! xx
