Cinnamon and Garlic Baked Sweet Potato Wedges

I love sweet potatoes. I say this all the same time I know, I know. I don’t think I can say it enough. I especially love that they are perfect just plain jane on their own. This time I went on a whim and added two ingredients – hello cinnamon and garlic baked sweet potato wedges!!!

It’s safe to say I’m now addicted to these delicious wedges. I love how they melt in your mouth and the mix of sweet cinnamon and that garlic kick is just perfect!! Go on and try them! They require very few ingredients and are so versatile. Perfect as a snack on their own, with salads, or with a main meal. Basically with anything and everything! Enjoy xx

Ingredients

  • 3 large sweet potatoes

  • 1 clove garlic

  • 1tsp ground cinnamon
     

  • 4 rosemary sticks

  • 2tbsp coconut oil

  • ¼tsp salt

Directions

  • Pre-heat the oven to 200C.
  • Wash the sweet potatoes. You can either peel them or use them as they are. Cut them into thick wedges about one inch wide.
  • Place the wedges in a bowl and add the coconut oil, salt, garlic and cinnamon. Mix it all together. Place them on a baking tray and then place the rosemary sticks on top.
  • Bake them for about an hour. Turn them over after 30 minutes to make sure that they’re evenly cooked.
