What better way to start a day than with . I love the mix of the zingy flavour of the oranges and the coconut. I like to drizzle a bit of honey over them as well and it is just pure perfection! I also add in some flaxseed for extra nutritional value. Flax seeds are the richest sources of plant-based omega-3 fatty acids.These delicious crepes are a great option for both breakfast and a sweet dessert.
Ingredients
1 tbsp flaxseed
1 tbsp coconut oil
250ml coconut milk (or any other plant-based milk)
1 tbsp honey (or raw cane sugar or maple syrup)
125g self-raising gluten-free flour (available at Healthy U)
Pinch of salt
zest of half an orange
Vegetable oil
Directions
- Mix flaxseed and 2½ tablespoons of cold water, then set aside to thicken.
- Combine the milk, orange zest and the coconut oil (melted), then whisk in the flaxseed mixture.
- Combine the flour, sugar and salt, then make a well in the middle.
- Gradually pour in the wet mixture, stirring continuously until combined and set aside.
- Preheat the oven to its lowest temperature. Heat a splash of vegetable oil in a large frying pan over a medium heat. Add a ladleful of the batter to the pan.
- Cook for around 2 minutes, or until golden underneath and little bubbles start to appear on the surface, then use a palette knife to flip them over. Cook for a further 2 minutes, or until golden.
- Serve with a a drizzle of honey and grated orange rind, if you like. Enjoy!
