Chocolate Brownies

It’s been rainy in Nairobi for the last couple of weeks and being indoors digging into a slice of these delicious chocolate brownies has brightened my day! I love that I can enjoy such delicious treats while still eating clean.

I’ve made some raw brownies before as well and wanted to try something different by baking these. They turned out perfect! I used coconut sugar to sweeten them which is a great as it’s a low GI sweetener.

Ingredients

  • 1/2 cup Healthy Kajuju oat milk

  • 2tbsp almond butter

  • 125ml coconut oil or extra virgin olive oil

  • 50g raw cacao powder

  • 3 tablespoons flax seeds + 9 tablespoons water

  • 200g coconut sugar or jaggery

  • 185g Healthy Kajuju gluten free flour

  • 60g walnuts

Directions

  • Preheat the oven at 180ºC.
  • Add the flax seeds and the water in a blender, blend and keep it aside.
  • Combine the dry ingredients in a bowl (coconut sugar, unsweetened cocoa powder and flour) and mix well.
  • Combine the wet ingredients in another bowl (flax seeds+water, oil and peanut butter) and mix well.
  • Combine the dry and wet ingredients and mix well. Add the walnuts and stir.
  • Pour the mixture in a baking pan with baking paper and bake at or 180ºC for about 25 minutes.
  • Enjoy!
